The creamery
In the very beginning, only patients and doctors had acces to Tanaïl’s farm milk. It is only after 1958 that the dairy farm began to develop in a commercial prospective, with the help of the Jesuit fathers. The actual brand “La laiterie du couvent de Tanaïl” was created and put on the market in 1994. The dairy farm, or malbana, as the local residents like to say, is the showcase of the domain; it produces dairy products for the convent at Tanaïl, provided from its farms.

The convent’s products
The convents’ products come from dairy cows living at the domain. The production is done at Tanail, packaging and sales are also done on the spot.
Fresh and quality products are available to visitors such as yogurt, labneh (pressed yogurt), butter, fresh cream, pasteurized milk, and assorted white cheeses (halloum, akkawi, Kariche, majdoule, chanklish, double crème).
A low fat range of products complements the multitude of base brands. The dairy farm of Tanaïl is notably the only one in Lebanon which makes the yellow Dutch cheese known as Gouda type , which is fermented from 3 to 18 months at 12° C in a refrigerated chamber, with humidity neighboring 70%.
Hygiene
All products are natural, of farm and craft production, without preservatives nor additives. The process is entirely done on site at the domain, from fodder crop cultivation to dairy processing.

Modernization
arcenciel tries to develop the dairy farm as much as possible and gets involved upgrading equipment to improve the quality of practices and to better master green energy. Solar panels provide an alternative energy source since 2010 and the upcoming installation of wastewater treatment will permit discharges with a reduced impact on environmental pollution.
The dairy products of "La Laiterie du Couvent de Tanaïl" are the only products, entirely manufactured at the Tanail domain, under the Tanaïl name across the branding and the slogan.
